Refreshing breakfast. Especially with fresh fruit!
Ingredients:
1 1/2 cup Thick cut Rolled Oats
1/2 cup mixed nuts (walnuts, cashews, almonds, pistachios)
1/2 tsp. cinnamon, nutmeg
1/3 + cup sugar free maple syrup
1 tsp. vanilla extract
1 tbsp. butter (melted)
1/3 cup unsweetened banana chips, chopped
1 hand full fresh fruit or raisins (if desired for topping)
Method:
Place rack in center of oven. Preheat oven to 325 F. Line baking tin w/ parchment paper.
Combine all dry ingredients in medium bowl. Combine all wet ingredients in small bowl. Combine all ingredients together, coating well.
Spread as evenly as possible in baking tin. Bake 45 – 55 minutes or until golden brown, stirring occasionally for even baking. The browner the crunchier.
Break up large clumps while still warm. Completely cool and store in airtight container in refrigerator.
