Mom’s Pumpkin Waffles

This is a triple recipe

 

Wet Ingredients:

  • Beat 3 eggs
  • 1/3 cup pumpkin (beat into eggs) or use sweet potato
  • 1/2 cup avocado oil
  • 3 cups buttermilk

 

Dry Ingredients:

  • 2 1/4 c. Flour (1c. Whole wheat, corn flour, millet flour, almond meal, unbleached white flour)
  • 1 1/2 tsp. Salt
  • 3 tap. Baking Soda
  • 1/2 tsp. Pumpkin Pie Spice
  • 1 tsp. Cinnamon

 

Instructions

  • Mix dry ingredients well.
  • Add all dry ingredients to wet. Mix gently.
  • Spray waffle iron when cold. Only spray once.
  • Don’t overfill waffle iron. If you do overfill, don’t put the lid down until bottom cooks a little.
