This is a triple recipe
Wet Ingredients:
- 2 cups low-fat buttermilk
- 1/3 cup melted butter
- 2 large eggs, lightly beaten
- 1 teaspoon vanilla extract
Dry Ingredients:
- 2 cups all-purpose flour
- 2 tablespoons white sugar
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
Instructions:
- Whisk flour, sugar, baking powder, baking soda, and salt together in a bowl until evenly combined. Whisk buttermilk and butter together in a separate bowl. Stir buttermilk mixture into flour mixture until just barely combined. Gently add eggs (whipped until fluffy – for lighter waffles). Batter is still slightly lumpy; add vanilla extract.
- Preheat a waffle iron according to manufacturer’s instructions.
- Pour 3/4 cup batter into the preheated waffle iron. Cook 6 minutes (or longer if using refrigerated batter).
