Apple Fritter

Five  recipe variations included.

Ingredients:

  • 1/2 cup milk
  • 1 teaspoon of vanilla
  • 1 egg
  • 2 tablespoon butter, melted and cooled
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1-1/2 cups cake flour
  • 1 tablespoon orange zest
  • 3/4 cup chopped apples, skin-on
  • 1/2 cup sugar
  • apple butter, optional

Preparation:

Preheat at least 2-1/2 to 3 inches of hot oil in a deep-fryer or pan to 325 degrees. Blend first four ingredients. In a separate bowl, combine baking powder, salt and flour with a wire whisk. Fold flour, zest and apples into wet mixture. Drop spoonfuls of batter into hot oil. Fry for about 2 to 3 minutes or until golden brown. Drain on paper towels. Lightly toss with sugar. Serve warm with apple butter, if desired. Recipe

Ingredients

  • 1 tablespoon butter
  • 2 tablespoons brown sugar
  • Juice of one lemon
  • 1/4 cup water
  • 2 cups chopped apples
  • Splash apple brandy
  • 1/4 teaspoon cinnamon
  • 2 eggs, separated
  • 2/3 cup milk
  • 1 tablespoon melted butter
  • 1 cup sifted flour
  • 1/4 teaspoon salt
  • 1 tablespoon sugar
  • Drizzle cane syrup (recommended: Steen’s)
  • Confectioners’ sugar

Directions

Preheat a deep fryer.

In a saucepan, melt the butter. Stir in the brown sugar and cook for 30 seconds to dissolve the sugar. Add the lemon juice, water, apples, brandy and cinnamon. Cook the apples for about 3 to 5 minutes or until the apples start to wilt. Remove from the heat and cool completely.

In a mixing bowl, whisk the egg yolks, milk, melted butter and cooled apple mixture. Stir in the dry ingredients into the liquid mixture. Blend until the batter is incorporated. Cover the batter, place in the refrigerator and let rest for 2 to 4 hours.

In a standing mixer or with a whisk, beat egg whites until stiff. Remove the batter from the refrigerator and blend until smooth. Fold in the beaten egg white. Using a large spoon, drop the batter into the hot oil and fry until golden brown, about 3 to 4 minutes. Remove from the oil and drain on paper-lined plate.

To serve, Mound the warm fritters on a platter and drizzle with cane syrup. Garnish the fritters with powdered sugar. Recipe

APPLE FRITTERS

Serves 8

2 eggs, separated

1/2 cup milk

2 tablespoons apple cider

1 tablespoon unsalted butter, melted

1 cup all-purpose flour

1 teaspoon baking powder

1/4 teaspoon salt

1 cup vegetable oil

4 Ida Red apples, or similarly juicy variety, such as McIntosh, cored

3 tablespoons confectioners’ sugar, for garnish (optional)

1/4 cup honey, for garnish (optional)

1. In a medium mixing bowl, blend the egg yolks with the milk, apple cider, and melted butter. Sift in the flour, baking powder, and salt. Combine well, and chill the batter in the refrigerator for at least 1 hour.

2. Heat oil in a large cast-iron skillet over medium heat. Beat the egg whites with a whisk until stiff but not dry. Fold egg whites into the chilled batter with a rubber spatula.

3. Slice apples into 1/4-inch-thick slices, discarding the first and last slice off each apple. Dip the apple slices into the batter. Gently place the coated apple slices into the heated oil in the skillet. Cook the fritters in small batches, until the outside is golden and crisp, about 2 minutes per side. Transfer the cooked fritters to a paper-towel-lined plate to drain well. Serve immediately with a sprinkling of confectioners’ sugar or a drizzling of honey. Recipe

Autumn Apple Fritter

Ingredients:

* 2 tart, medium cooking apples, such as Jonathan or Granny Smith
* 2/3 cup all-purpose flour
* 1 tablespoon powdered sugar
* 1/2 teaspoon finely shredded lemon peel
* 1/4 teaspoon baking powder
* 1 egg
* 1/2 cup milk
* 1 teaspoon cooking oil
* Shortening or cooking oil for deep-fat frying
* Powdered sugar (optional)
* Cinnamon sticks (optional)

Nutritional Information:

Steps:
1. Core apples and cut each apple crosswise into 6 slices. Set slices aside.

2. In a large bowl combine flour, the 1 tablespoon powdered sugar, the lemon peel, and baking powder. In a medium bowl use a wire whisk or rotary beater to beat egg, milk, and the 1 teaspoon cooking oil until combined. Add egg mixture all at once to flour mixture; beat until smooth. Using a fork, dip apple rings into batter; drain off excess batter.

3. Fry 2 or 3 fritters at a time in deep hot fat (365 degrees F.) for 1 minute on each side or until golden, turning once with a slotted spoon. Drain on paper towels. Repeat with remaining fritters. Sprinkle warm fritters with sifted powdered sugar, if desired. Cool on wire racks. To serve, thread fritters onto cinnamon sticks, if desired. Makes 12 fritters. Recipe

Apple Fritter Bites

Ingredients

1 C. Flour
¼ C. Sugar
1 t. Baking powder
½ t. Cinnamon
½ t. Salt
1/3 C. Milk
1 Egg
1 T. Lemon juice
Zest of half of a lemon
1 t. Vanilla
1 Large apple, cored, peeled and diced small
Canola oil for frying

Instructions

In a large bowl stir together all of the dry ingredients. Make a well and add the wet ingredients and stir together well. Add the apple and mix together.

In a deep fryer or large sauce pan, pour the grease to a depth of 2 inches and heat over medium until it reads 360 degrees. Test a bit of dough to ensure it is the correct temperature.

Using a one inch cookie scooper, drop about 4 to 5 scoops of the batter into the hot oil. Be sure to not overcrowd the oil. The fritters should float to the top and puff to about double their size. Deep fry until dark golden brown on the first side, about 2 minutes and then using a slotted spoon or thongs, flip over and cook for another minute. Remove with slotted spoon and transfer to a paper towel lined baking sheet to drain. Repeat until the dough is gone.

Let cool if you are going to glaze and use a wire rack to let excess glaze drip. If you are going to make a cinnamon sugar mixture, then dip fairly soon after removing from the oil so the sugar mixture sticks.

Cinnamon-Apple Glaze

1 C. Powdered sugar
½ t. Cinnamon
2 T. Apple cider or apple juice

In a medium bowl, add the sugar and cinnamon together and stir. Then add the apple cider and whisk together until smooth. Recipe
