Ingredients:
- 2 Pie crusts (9″ Graham Cracker)
- 2 Eggs
- 3/4 Stick of Butter
- ~ 2 c. sugar and 18 – 24 packets of Truvia (sweeten to taste)
- 1/4 c. Condensed Milk
- 1 tsp Cinnamon
- 1/2 tsp Nutmeg
- 2 tsp Vanilla
- 3 medium Sweet Potatoes (when cooked should = 3 c or 1 1/2 c. per pie)
Instructions:
- Boil sweet potatoes for 50 – 60 min.
- Peel and squish, then add all ingredients (except the sweetener) with a mixer.
- Divide into equal parts in separate bowls, add sweetener (sugar in one, Truvia in the other).
- Pour into crusts, making sure not to over fill (do not level off to the top of crust. The pie will not get done in the middle without the edges burning)
- Bake on middle rack of oven at 350 degrees for 55 – 60 minutes or until toothpick inserted in the center comes out clean.
- Cool completely before serving. Keep refrigerated. Keeps well for about 2 – 3 days.
