Broccoli, Pear, & Walnut Salad

This side dish is heavily inspired by a similar dish that can be purchased from the deli at The Fresh Market. It pairs beautifully as a more healthy side-dish with burgers, hot dogs, etc.

Broccoli, Pear, & Walnut Salad

Ingredients

  • 1 2lb bag of broccoli florets about 3-4 heads of broccoli
  • 3 pears cubed or sliced into matchsticks
  • 3 tbsp lemon juice about as much as you can hand-squeeze from 1 large lemon
  • ½ cup walnuts chopped; use more if needed
  • ½ cup matchstick carrots use more if needed
  • 1 cup mayonnaise
  • ⅛ tsp sea salt
  • ⅜ tsp sugar to taste

Instructions

  1. Chop up the broccoli into small, bite-size florets and add to a large bowl. Discard/compost most of the stems. Note: If using pre-cut florets, additional chopping of the florets may still be required.

  2. Dice the pears into cubes and/or slice the pears into matchsticks (variety is okay here) and pour over the broccoli. Pour the lemon juice over the mixture, targeting the pears specifically (the lemon juice will help keep them from turning brown).

  3. Roughly chop the walnuts and add to the mixture along with the matchstick carrots.

  4. Add the mayonnaise (use a long, preferably hard-ish spatula to stir/mix). Season with salt and sugar.
